Chicken and rice

Full disclosure: I'm heading out of town next week, and I need to pre-load some blog posts before I go, so everything is getting written up this week, even if it's just chicken and rice. However, since I knew I was going to be writing about this shit, I had to do something slightly interesting, right? Well, I did my best, at least. 
To be fair, all I did was season up some deboned chicken legs with salt and pepper and pan-fry it up in some butter and olive oil. I made sure to do lots of basting to keep the butter emulsified, and I was able to get some great browning on the meat and skin.
I also threw in some sliced garlic and minced red onion with the chicken to give it a little more flavor. Plus, who doesn't love the smell of onion and garlic frying in butter? Heathens, that's who. Fuck them. It's the best smell in the world. 
When the chicken was done, I sautéed up some diced radish and orange bell pepper to mix into the rice. I didn't even bother taking pictures because you've seen me do that a hundred fucking times. When that was done, I mixed it into my cooked rice with a little extra virgin olive oil.
Last, but certainly not least, I caramelized some halved and quartered mushrooms in a little butter and some white wine with salt and pepper. Just a low heat to start, but I increased it to get the outsides a little fried. It was a good choice.
I do have to use up my balsamic mayo before it goes bad, so I put a scoop on my plate and drug the back of my spoon through it to smear it across somewhat, then I laid the chicken on top of that.
I carefully took out a spoonful of rice and even managed to keep it on a nice round shape all the way to the plate. I was pretty fucking proud of that. 
Finally, to be all artistic and shit, I scattered a few mushroom pieces around the plate. I thought it actually looked pretty good, which is honestly a rare opinion for me to have about my own plating.
Now for the important part: the flavor. The chicken was good, but it wasn't great. The texture was perfect, but it was just lacking...something. The rice was fine, nothing special. Like I said, I've done this so many times that it's sufficient but not groundbreaking in any way. The mushrooms were the star of the show. I had to shout a little "hell yeah!" when I took my first bite. I honestly wish I had just made a giant bowlful of those mushrooms, and I may end up doing that one day when I'm bored and hungry.

Restaurant week: Polish food truck tasting

Due to a strange combination of circumstances, I recently found myself at a menu tasting for a soon to open Polish food truck called Halinka's Polish Eatery . I'm about 99% sure I was the only person in attendance who wasn't already personally known to the owner/chef, Magda, but it was a good time. Got to meet some nice folks and eat free food, but then I had to give feedback in public in front of other people, so that kind of sucked. Like, really fucking sucked. Stream recap: pseudo-bougie dinner party

 This past Sunday (1/18/2025) was my second cooking stream of the New Generation of ODG Cooking Streams. When I was trying to come up with a "theme" for the afternoon, I was thinking a lot about those fancy-ass restaurants where they serve you three bites of food on a fucking plate five or six times and, even though you're somehow full, it still doesn't seem to quite justify spending five million dollars just to eat there for two hours while everyone around you looks at you condescendingly because you didn't wear a goddamn tie.
