I had some chicken thighs, I had some veggies, and I wanted some pasta. So I made some pasta with chicken and veggies. I'm super good at solving problems like that.
I pulled out some parsley, the rest of my basil, some kale, a lot of garlic, a few mushrooms, a few tomatoes, and the last of my orange bell pepper. The parsley, basil, and kale were roughly chopped, the tomatoes were cored and halved, the mushrooms sliced, and the bell pepper diced. I just crushed most of the garlic cloves, the but the last two I sliced up super thin.
I removed the bones from the chicken thighs again and tossed them into the oven at 400 for a few minutes until they got pretty damn cooked, then I dumped them into a pot of water with some salt and boiled the hell out of it until it cooked about halfway down; I removed the bones and used that broth to cook the pasta.
In the meantime, I seasoned the thigh meat on the skin side with a little salt, a little pepper, and a bit of herbes de provence (I seasoned the non-skin side with just salt and pepper), melted some butter in my pan, and laid the chicken in skin side down until it got a bit crisped up, then I added in a little olive oil and flipped the chicken.
When the chicken was done, I pulled it out of the pan to rest, then tossed in the crushed garlic, bell pepper, and kale stem for a minute before deglazing with some white wine. Once things got nice and simmering, I dumped in the tomatoes peel side up. As they cooked some, I flipped them over and dumped in the parsley and basil.
When the tomatoes were cooked enough, I pulled the peels off with my tongs, then dumped everything into the food processor with a splash of the pasta broth and a little cream and let that run until everything was pretty well smoothed out.
While that was blending, I added a little butter and my sliced mushrooms into the pan and let them cook a bit before dumping in my kale leaf and sliced garlic. When the kale got a bit wilted, I poured the sauce back in, mixed it all up, seasoned a little with salt and pepper to get the flavor right, and let it cook down for a minute or two before I dumped the pasta in to finish it.
When it was finally time to plate up my dinner, I pulled some of the pasta out and dropped it in the middle of my plate and scooped a little extra sauce and veggie on top. I followed that up with a fresh crack of pepper and a light sprinkling of grated parmesan.
Once I was satisfied with my pasta pile, I stacked my chicken thigh on top, took a picture, and ate the shit out of it because I was fucking hungry. The End.
